Black Garlic Chocolate Chip Cookies

Who said garlic was for savoury foods only? Enjoy the dynamo duo of black garlic and chocolate in these one of a kind cookies!




Black garlic is so unique! It has proven again and again to be a popular product of ours, especially now that the secret is out about using it in sweet foods! People seem to be intrigued and interested in trying it, but the most common question is... "how do I cook with it?"


First, lets start off with what it is! Black garlic is a fermented or cooked garlic. It starts out as fresh bulbs and takes weeks, sometimes months to make. We use our very own Red Russian bulbs, all grown spray-free on our farm! A low, consistent heat is applied over many days in a humidity control environment, resulting in the natural sugars caramelizing and that beautiful inky colour! The texture is soft, so much so that you can usually spread the cloves on toast, and the garlic transforms into a sweet powerhouse full of antioxidants!


You can use black garlic in place of your regular garlic, although it does have a different taste and is a more mild garlic. Because of that, you can also eat it straight up! It pairs well with cheeses, meats, popcorn.. you name it! And of course, I know at this point you are all thinking "geez that girl puts garlic in EVERYTHING!", and honestly you're not wrong! But in the process of trying to find delicious recipes to suggest to our customers, I came across the idea to bake with black garlic and now there's no going back!


My dad (a former garlic non-eater) declared these to be the most decadent chocolate cookies he's ever eaten, the garlic and chocolate blend beautifully! I know it seems strange at first, but keep an open mind and I promise you won't be disappointed! These cookies have an explosion have flavour that your tastebuds will thank you for!




Black Garlic Chocolate Chip Cookies


1 cup flour

1/2 tsp salt

1/2 tsp baking soda

1/2 cup margarine or butter

1/2 cup white sugar

1/4 cup brown sugar

1 egg

1 6-oz pkg. semi-sweet chocolate chips

2 bulbs black garlic, peeled and cut into small pieces


  1. Sift together flour, salt, and baking soda. Set aside.

  2. Cream together butter, sugars and egg. Stir in chocolate chips and black garlic.

  3. Add dry ingredients and mix until combined.

  4. Drop by teaspoons on uncreased baking sheets, about 1" apart.

  5. Bake at 375 F for 8 to 10 minutes. Let stand 30 seconds before removing from baking sheets.
