BBQ'd Chicken Nachos with Smoked Black Garlic

It's Fri-YAY and we've got the BBQ going! Call us crazy Albertans if you want, but it is currently hovering around the freezing point and these nacho's are heading for the grill. Far be it from us to turn down an opportunity for this family favourite using our Smoked Black Garlic. This recipe can easily be cooked in your oven or BBQ, depending on your weather preferences!

Lately, I've been asked quite a bit on how to use our smoked black garlic. It's such a unique product that it can be challenging to think of recipes, so I've spent a bit of time brainstorming some more ideas for you. You might like it as a salad topper, or try using it for a steak rub! The smoked black garlic is an excellent addition to a mushroom omelet, or add it to soft butter before making garlic toast! But first, let me give you the rundown on how we make this product...
Black garlic starts off as regular garlic. We use our own bulbs, grown directly on our farm, and expose them to a low, consistent heat with a specific humidity so that the sugars naturally caramelize and the end product is a fermented garlic with inky-black cloves! These bulbs have twice as many antioxidants, as well as vitamin C, as it's fresh cousin does. The resulting flavour is sweet, almost like molasses, with just a hint of garlic. We then take the bulbs, peel them by hand, and begin the smoking process.
